Ingredients
- 1lb of ground turkey (aka turkey mince)
- 1 or 2 can of black beans
- 28oz of cento san marzano tomatoes
- half a tin of tomato paste
- 3 cloves of garlic, smushed
- 1 onion, diced
- 1 red bell pepper, diced
- 1 jalapeno, deseeded, diced
- chicken bouillon paste
- spices:
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp oregano
- 1/2 tsp black pepper, ground
- 1 dried guajillo pepper, ground
- lemon juice
Method:
- Fry onion for 10 mins in a little olive oil, with some salt.
- Add spices, garlic, tomato paste.
- Add tomatoes, roughly chopped.
- Simmer 20 mins.
- Puree 1/2 of the mixture.
- Add beans, including the liquid from the can.
- Fry turkey separately and drain off excess fat. Add turkey to main pot.
- Add bell pepper and jalapeno.
- Add boullion paste and lemon juice to taste.
- Simmer 30 mins.
- Garnish with grated parmesan, red onion, cilantro (coriander leaf), and avocado.
Best served the next day.
